In 2009, based on Russian expertise Anna Royal Dutch Caviar established its sturgeon farm in Eindhoven. Thousands of sturgeon are swimming in their tanks, they range in length from 20cm up to 1.5 mtrs. Due to polluted waters the sturgeon has become an endangered species in Russia. Sturgeon cultured in pure water produce much healthier caviar than those in the wild.
Man-sized closed system filters constantly purify the water and keep the water and the sturgeon healthy. Over ninety percent of the water in the tanks is recycled. Just before the winter wild sturgeon swim towards riverbanks where the water temperature is cooler, this is where they hibernate before spawning in the spring. Sturgeon only spawn for three months per year, for this reason producers of wild caviar must build their annual sales stock during these three months.
Anna Royal Dutch Caviar is named after Anna Paulowna. She was known as the Grand Duchess of the Netherlands and belonged to the Russian Romanov house. From 1840 to 1849 she was married to King Willem II and was Queen of the Netherlands.
